Occupying the top six floors of its 52-story namesake skyscraper, Andaz Tokyo Toranomon Hills (81-3/6830-1234; doubles from US$415) sets the bar high. New York–based Tony Chi co-designed the 164 rooms and suites with Hokkaido walnut, shoji screens, and deep soaking tubs. Inspiration comes from elsewhere in its three eateries: the European provincial Andaz Tavern on the 51st floor and burger joint Bebu and the sweets-filled Pastry Shop at street-level. But the Japanese garden, chapel, and tea counter–inspired bar return to tradition on the roof—the highest in all of Tokyo. –Gabrielle Lipton
