Where else would you find the world’s largest St. Regis hotel than in bigger­-is­-better Macau? Upping the ante with 400 rooms, the year­-old property nonetheless exudes the refined opulence for which the brand is known, and is downright diminutive compared to its Cotai Strip neighbor, the 4,001­-room Sheraton Grand Macao. Guest quarters are sumptuously appointed with Chinese accents such as brushed­-gold lacquer and mother­-of­-pearl artwork offsetting a palette of ivory and turquoise; they also all come with 24­-hour butler service, a first for the city. The gorgeous Iridium Spa on the 38th floor is among the best in town—signature therapies revolve around gemstone­ infused massage oils—while The Manor, which comprises five dining rooms and a wine room, is a destination in its own right, dishing up everything from robata­-grilled Miyazaki wagyu to seared Hokkaido scallops with black­-pig lardo and smoked chili butter. Be sure to end at least one evening in the St. Regis Bar, another beautifully designed space with house­-flavored spirits and bitters, tableside cocktail service, and a zeal for fresh ingredients: order a gin and tonic, and it will likely come with a basil leaf plucked straight from a planter box. Better still, try the Maria do Leste, a Macanese take on the Bloody Mary spiced with pink peppercorns, piri­-piri, and cinnamon. (853/2882­8898; stregismacao.com; doubles from US$243).
