Designed like a Rajput palace, Fairmont’s first Indian property is a stunner in a city already well served by opulent properties. It’s nestled outside of town in the Aravalli hills, with each of its 255 rooms and suites blending Rajasthani-inspired decor (hand-painted wall designs, carved bedposts) and the full gamut of modern amenities. As yet only one restaurant is operational, Zoya, whose international menu is studded with family recipes compiled by chef Anurag Bali on culinary road trips around the state; standouts include the kairi wali bhindi (okra with green mango) and bharwan mirch (stuffed green chiles). Sitar music wafts through a cavernous lobby adorned with jali screens and plasterwork reliefs, while a nightly “King’s Bazaar” gives guests the chance to pick up choice souvenirs like block-printed silk scarves and lapis-lazuli elephant charms.
